I know what stew is but ‘scouse’ is not an Aussie word. Never heard it before. Some call a stew a casserole but not in my house.
Late to the party, but that stew (we call it that too) looks so perfectly yummy and with crusty bread?? Sigh....my mum used to make it exactly like that. Now you have me thinking of making it.

I really do not mean to offend and if I do I apologise but ‘scouse’ and ‘cawl’ both sound extremely unappetising. We grew up with Scottish words for some foods, I forget which at the moment and they sounded gross too, but we did love our steak and kidney and dumplings. Mum always made dumplings when visitors came because they made the meal go further.
'Scouse' is the Liverpool accent and dialect. It's also its famous stew which will set you back a few pounds if you order it in the touristy cafes and restaurants. I believe it was brought to the port of Liverpool originally by Norwegian sailors. Many variations, depending on where you're from. Blind scouse doesn't have any meat in it, of course.
I had to rename our stews to casserole to get kids to eat it, but they soon cottoned on. As a nut for things Liverpudlian, I knew of scouse, but thought it's origin was Irish. Perhaps that was 'blind scouse' when times were tough.
I think with all those stodgy potatoes in the original recipe that I found online, perhaps it was Irish. The original didn’t look very appetising but I really love a good stew, I just dont put potato in mine. We have that mashed on the side and no dumplings.
I also love green peppers and they go in my stews. Parsnips can be good too as they have a rather sweetish flavour. Plus a number of spices. Mum used to make hers with just meat, carrots and potatoes, with a bit of onion as well.
Celery, carrot, parsnip, onion, beef, salt, pepper and a dash of Worcester but brown the flour coated beef first. To make a one pot dinner, throw in some frozen peas at the end. Not many though. Chopped Italian parsley on top. No potatoes in it though. Too stodgy.
