I'm trying to find who was Mr Smart and what was Elizabeth's maiden name?

Elizabeth Smart married George Cawdery in 1831 at St John the Evangelist, Lambeth. She was a widow OTP, witnesses are Cawderys
In the 1841 census they can be found in Islington where their ages are 30
In the 1851 census she is 50 and born Hertford [shire?] and he is 48
She died in 1857 age 56, so it seems likely she was born 1801

The only other potential clue I have is that their first son was baptised George Hagan Cowdery in 1833 at St John the Evangelist. I have no idea if this is relevant to her, but I haven't found a Hagan/ Smart marriage.

Is there anything I have missed that I could look at?

There's a family tree on FamilySearch which suggests that Elizabeth's name was Hagen when she married George and her birth name was Smart. I also found a website which has a bit about George Hagen Cawdery and suggests that he had sisters Mary Hagen Cawdery (1823-1898) and Elizabeth Cawdery (1837-):

I thought if it were possible to find Elizabeth Cawdery's birth in 1837 on the GRO it would show her mother's maiden name so that a previous marriage could be investigated, but I couldn't find anything for sure. So many variants of the name are possible!

There's a family tree on FamilySearch which suggests that Elizabeth's name was Hagen when she married George and her birth name was Smart

find Elizabeth Cawdery's birth in 1837 on the GRO
Elizabeth was baptised in June of 1837 as Cowdery, but her age varies on censuses and I think she may have been born just before the GRO registration
 
Looking for potential Mr Smarts in Lambeth ( you may have already checked this one) - there were two children baptised at St Mary's in 1827, Joseph Peter Smart and Eleanor Jane Smart. Parents John and Elizabeth. John a sailor. Abode Saunders Street.
So far I can't see any trace of John, Elizabeth or the children after 1827 or any suitable deaths.
I can't see anything to link them to your family apart from Elizabeth's name, but it would be good to be able to eliminate them.
