When I was a child, on Pancake Day – Shrove Tuesday, which falls 47 days before Easter Sunday – my Dad always insisted on having banana fitters as well as pancakes. He said that he was a deprived child during the war, his mother keeping the butter and sugar rations to herself. This resulted in his favourite sandwich being thick white crusty bread, lashings of butter, sliced banana and sugar sprinkled over the top. This remained his favourite for the rest of his life!

However, I digress…

I thought of my Dad as a result of today, 2nd December being National Fritters Day in America. The origins of fritters is rather obscure – Samuel Pepys wrote in one of his diaries that he would be enjoying fritters before Lent. However, it is thought that it was down to the Romans bringing the idea to Europe. They are used is many cuisines: French beignets, Italian bignè, and Greek loukoumades to name but a few.

But why 2nd December? No idea. :D
 
Yum, banana sandwiches. Mum would mash the banana, add the top of the milk and sugar. Served in Wonderloaf and Stork marg. :)
My brother (15 years my senior, and already at work when I was born), used to take them for his lunch. If he brought any home uneaten I would have them toasted for my tea. I still prefer them toasted to this day (no cream or sugar added nowadays:(, nor the margarine, butter now)
 
Bananas are one of those foods that are meant to be good for you (rich in potassium etc), but I'm not keen on them. My Thai neighbour makes a mean banana fritter though.

And the local fish and chip shop does spam fritters (remember these from school?)
 
An alternative to deep frying your fritter is to make a thick pancake batter and mash a banana into it then fry like drop scones, A great way to use up a banana that is verging on over ripe.
And I agree, SPAM yuk!
