I now know what a turtle merchant did :(
The Painter family ran a tavern in Leadenhall Street, called the Ship and Turtle (now demolished)
They were purveyors of turtle soup (to royalty as well as in the tavern), and even sold it in earthenware jars, bearing their name and the name of the pub, some of which can be found on auction sites.
In 1861 Adeline and Charles were running the Inn (father George before then).
On one census brother Adolphus was also a turtle merchant.
 
Thank you @Andromeda, I was holding off on looking at this death until I had had a look at Adeline's will.With what you have found it seems that the death cert is unlikely to provide any useful info:(
 
Adeline and Charles also had a son Charles Adolphus and William Arthur who went to NZ had a son William Arthur Adopholus. I wouldn’t write that death off completely though. If William West went to France, as is possible he may have not been needed after Charles death. He was a servant, yes but maybe a labouring job was all he could get.

Adeline's will has arrived, it made such good reading and boy did she say everything she wanted - warts and all.
Not a mention of Matthew (of course not :( :headbang: ), but I have copied the will below (spelling mistakes and all) - I do not know how to put a superscript letter so put them in ( ).
